onion & Scallions
Ishikura - scallion
Ideal temp: 35℉ scallions, 55℉ storage
Most onions you receive will be cured (a process of drying the onions down for storage). For these, it's not necessary to keep them in the fridge, especially if you will be using them soon. A cool, well-ventilated, dry basement or root cellar is optimum. For longer term storage, place onion in the fridge with adequate ventilation (In a brown or mesh bag). Storage life: 60-90+ days.
For Spring onions (those that haven't been cured) or scallions, place in a plastic bag in the fridge. Storage life: 20-30 days.
The list is endless!
Red - I prefer to use raw:
Slivered thin or minced in salads (green, bean grain, egg, tuna)
Bagels or toast with cream cheese and smoked fish
White - raw or cooked; milder flavor:
Salads with cilantro and lime (taco topping)
Minced in bean, grain, or heartier salads
Yellow - cooked or grilled
Chopped in salads
Asian noodle salads & other dishes
Bagels, or on toast
pairs well with:
Just about everything!
